Ingredients
- 50g caster sugar
- 115g runny honey
- 5 lemons, juiced, plus slices to garnish (optional)
- 3 thyme sprigs (approx.), plus extra to garnish (optional)
- 750ml soda water (or prosecco)
- 8 shots Sipsmith Lemon Drizzle Gin (optional)
Method
Step 1
In a large heatproof jug, dissolve the sugar in 50ml just-boiled water, then stir in the honey.Step 2
Add the lemon juice and whisk to combine. Pop the thyme in and give it a stir, then cover and chill the cordial until needed.Step 3
For the spritz, spoon 3 tbsp of cordial into each glass and top up with soda water. Or, for the adults opting for a boozy version, top with prosecco instead of soda and add a shot of gin. Finish off with a sprig of thyme or a lemon slice, if you like.
