
Honey za'atar sticky chicken

Ingredients
- 2 tbsp of za'atar
- 1 tsp of garlic granules
- 4 tbsp of runny honey
- 8 chicken thighs, skin on and bone in
Method
Step 1
Mix together the honey, za’atar and garlic granules – we’ve used garlic granules in this recipe, as fresh garlic burns easily on a hot barbecue, which can leave a bitter taste. Season and divide the mixture between two large bowls.Step 2
Add the chicken thighs to one of the bowls – keep stirring and turning until they are all coated in the honey mix.Step 3
Next, place the thighs skin side down on a hot barbecue for 3 mins, then turn and cook the undersides for another 3 mins.Step 4
Baste the tops with some fresh marinade from the second bowl, then turn and cook for 1 min more, basting the undersides.Step 5
Repeat this process of turning and basting every 1 min for 4 mins more, or until the meat is cooked through, and serve straight away.Step 6
TIP: If you prefer, oven-cook for 15-20 mins at 200ºC/180ºC fan/6 gas, or until juices run clear, then finish on the barbecue for 3-4 mins.
