Crumble it over your favourite ice cream or a sweet and creamy pud, like Rosie’s Coffee Mousse or just smash it into chunks and munch away. Time and servings

Ingredients
- 100g caster sugar
- 3 tbsp golden syrup
- 1 tsp bicarbonate of soda
Method
Step 1
Line a small tin or baking dish with non-stick baking paper; set aside. Take a high-sided pan and add the sugar, golden syrup and 1 tbsp water. Heat gently on a low heat, swirling the pan occasionally, until the sugar has fully dissolved.Step 2
Take the pan off the heat; immediately add the bicarb and stir vigorously with a wooden spoon for 10-15 secs. The mixture will bubble up and froth – this is normal!Step 3
Let the mixture continue bubbling until it turns a vivid golden colour – keep an eye on it so it doesn’t burn.Step 4
Quickly pour the mixture into the prepared tin. It will continue to bubble and puff for a moment before settling down. Let it cool and harden – this takes around 30 mins.Step 5
Remove the honeycomb from the tray; break it into chunks. Store in a lined airtight container for 1-2 weeks.
