
Hot Cross Buns

Get the morning off to a warm start with some simple homemade hot cross buns.Time and servings

Ingredients
- 450 g of plain flour, plus extra for dusting
- 2 tsp of ground mixed spice
- 75 g of currants
- 75 g of butter
- 50 g of light brown soft sugar
- 3 tbsp of caster sugar
- 25 g of mixed peel
- 1 tsp of salt
- 1 eggs, beaten
- 7 g of fast action dried yeast
- 300 ml of whole milk, lukewarm, plus 3tbsp for the crosses
Method
Step 1
Stir 1 tsp of the sugar into the warm milk, now sprinkle over the yeast and set to one side for about 10 minutes.Step 2
Sift the 400g of flour, salt & spice into a mixing bowl, then rub in the butter.Step 3
Stir in the remaining sugar, currants and mixed peel, make a well in the centre and pour in the milk mixture and the egg.Step 4
Mix to form a dough and then leave to stand for 10 minutes. Now turn the dough onto a floured surface and knead quickly, until smooth and springy; about 5 minutes.Step 5
Divide the dough into 12 equal pieces, shape into rounds and place on a greased baking tray. Cover loosely with lightly greased cling film and leave to rise in a warm place for about 1-2 hours until doubled in size.Step 6
In a small bowl mix 50g of the plain flour and 1 tbsp caster sugar with a little water to make a stiff dough, roll out thinly and cut into strips.Step 7
Mix the remaining sugar with the milk and heat gently, set to one side.Step 8
Bake the risen buns for 10 minutes then brush lightly with the sugar and milk and top with the dough strips to form crosses.Step 9
Return to the oven for a further 5 minutes. Brush again with the sugar and milk before cooling on a wire rack. Best served warm or toasted.
