
Hot Honey and Chocolate Old Fashioned Cocktail

This deliciously warming Hot Honey and Chocolate Old Fashioned has a homemade base of bourbon and cocoa bitters mixed with chilli-spiked honey. Created by bar owner and consultant Ryan Chetiyawardana – aka Mr Lyan – the recipe makes a 70cl bottle of the bourbon mixture, which is enough to create around 10 drinks. Ryan says: “This smooth, rich cocktail is great for keeping the party going after dinner – or to replace dessert entirely!”Time and servings

Ingredients
- 1 dried whole red chilli
- 200ml runny honey
- 600ml bourbon
- 2 tsp Angostura Cocoa Bitters
- 1 twist of orange, to garnish
Method
Step 1
Pour 100ml boiling water into a heatproof bowl and leave to cool slightly. Add the chilli, leave for 1 min, then spoon out and discard.Step 2
Stir in the honey until dissolved; cool completely.Step 3
Mix the bourbon and bitters in a jug with 100ml of the honey water (the rest will keep chilled in an airtight jar for 2 weeks). Pour into a clean 70cl bottle (a funnel helps here); chill.Step 4
To make the cocktail, stir 70ml of the bourbon mix over ice in a glass or cocktail shaker; strain into a tumbler over ice and add an orange twist.Step 5
