Ingredients
- 5 tbsp of extra virgin olive oil
- 2 cans of chickpeas, drained
- 1 whole lemon
- 4 tbsp of tahini
- 3 garlic cloves, crushed
Method
Step 1
Place the chickpeas in the food processor reserving 2 tbsp for the garnish.Step 2
Add the 4 tbsp of tahini and process until smooth, occasionally wipe down the sides.Step 3
Add the crushed garlic, lemon juice, 5 tbsp olive oil and the salt and process.Step 4
You may need to add one 1 tbsp extra of tahini and olive oil, taste and adjust the seasonings.Step 5
If the paste is to thick, add 2-3 tbsp of water, you may need to scrap the sides of the bowl down a few times as you go.Step 6
To serve , place in serving dishes, using the back of a spoon create a well, drizzle with olive oil, sprinkle with the rest of the chickpeas, paprika and toasted pine nuts.
