
Ice Summer Fruit Puddings

A lovely, fruity, summer dessert made even more refreshing with Carte D’Or Vanilla Ice CreamTime and servings

Ingredients
- 100 g of strawberries, quartered
- 250 g of carte d’or vanilla ice cream
- 2 tsps of runny honey
- 4 meringue nests
- 100 g of raspberries
- 50 g of blueberries
Method
Step 1
Place the Carte D’Or Vanilla Ice Cream in a bowl and crumble the meringues over the top.Step 2
Add half of the berries and gently fold in.Step 3
Spoon the mixture equally between the 4 prepared ramekins or teacups and level out. Cover with cling film and place in the freezer for 1 hour.Step 4
Make the berry sauce by placing the remaining berries in a blender with the honey and blitz until smooth.Step 5
Turn the iced puddings out onto serving plates and remove the cling film.Step 6
Serve each iced pudding drizzled with the berry sauce.
