Ice Summer Fruit Puddings

A lovely, fruity, summer dessert made even more refreshing with Carte D’Or Vanilla Ice Cream

Ingredients

  • 100 g of strawberries, quartered
  • 250 g of carte d’or vanilla ice cream
  • 2 tsps of runny honey
  • 4 meringue nests
  • 100 g of raspberries
  • 50 g of blueberries

Method

  • Step 1

    Place the Carte D’Or Vanilla Ice Cream in a bowl and crumble the meringues over the top.
  • Step 2

    Add half of the berries and gently fold in.
  • Step 3

    Spoon the mixture equally between the 4 prepared ramekins or teacups and level out. Cover with cling film and place in the freezer for 1 hour.
  • Step 4

    Make the berry sauce by placing the remaining berries in a blender with the honey and blitz until smooth.
  • Step 5

    Turn the iced puddings out onto serving plates and remove the cling film.
  • Step 6

    Serve each iced pudding drizzled with the berry sauce.
