
Iced Berries with Hot White Chocolate Sauce

“If you’re after a faff-free dessert, it doesn’t get much simpler than Iced Berries with Hot White Chocolate Sauce,” says food stylist and cookbook author Benjamina Ebuehi. With the perfect contrast of ice-cold berries and warm, creamy chocolate, it’s the ultimate easy treat on a summer’s day – just allow an hour’s freezing time. Out of season, a pack of pre-frozen berries will also work well, but the texture will be slightly mushier.

Ingredients
- 200g blueberries
- 150g raspberries
- 150g strawberries, large ones halved or quartered
- 120g white chocolate, finely chopped
- 200ml double cream
Method
Step 1
On a freezer-safe tray, arrange the blueberries, raspberries and strawberries in a single layer. Freeze for 1 hr (or up to 3).Step 2
Just before serving, make the sauce. Place the chocolate in a heatproof bowl. Gently heat the cream in a pan until just simmering, then pour it over the chocolate; let it sit for 20 secs, then stir until smooth.Step 3
Divide the frozen berries between bowls, pour over the warm sauce and serve immediately.
