Ingredients

  • 350 g of flour
  • 1 pack of shelled chocolate
  • 1 large of egg, beaten
  • 150 g of unsalted butter, softened
  • 2 lemons, zest, plus 1 tbsp of juice
  • 150 g of caster sugar
  • 125 g of icing sugar
  • 1 handful of hundreds and thousands

Method

  • Step 1

    Cream the butter and sugar until smooth. Stir in the beaten egg and then the flour and lemon zest. Bring together with your hands and wrap the dough in cling film. Chill for 10 to 15 minutes until firm.
  • Step 2

    Roll out the dough until 1/2cm thick and cut out biscuit shapes and put on baking sheets. Chill the biscuits until firm and you can pop them in the freezer for 10 minutes if time is short - and then bake for 8 - 10 minutes until golden. Remove from the oven and cool for a minute or two on the tray before cooling completely on a wire rack.
  • Step 3

    To make the icing, mix the icing sugar with a tablespoon of lemon juice. Add more sugar or lemon juice to make a spreadable consistency that's not too runny.
  • Step 4

    When the biscuits are completely cold, spread them with the icing and sprinkle with smarties and hundreds and thousands. Leave to set.
