
Instant Avo Choccy Mousse

Rich, but light and airy, chocolate mousse is an indulgent treat. Here mum and Sunday Times Bestselling author of What Mummy Makes, Rebecca Wilson, uses the unsweetened cocoa powder to introduce babies and young children to bitter flavours. The other ingredients are simple, just avocados and maple syrup, and you can sprinkle some berries on the top if you like. But like all of Rebecca’s recipes, this can be enjoyed by all the family. An added bonus is that you can make it extremely quickly, though you can chill to make it firmer. Time and servings

Ingredients
- 2 ripe medium avocados
- 80 ml of thick double cream
- 50 g of unsweetened cocoa powder, sifted
- 2 tbsp of maple syrup (optional)
- 1 handful of fresh berries, to serve
Method
Step 1
Add all the ingredients (minus the berries) to a food processor and whizz until completely smooth.Step 2
Serve immediately with the fresh berries, or chill for a few hours for a firmer consistency. Leftovers will keep in the fridge for 2 days.
