These Jammy Roasted Blueberries, from chef and award-winning author Rachel de Thample, make an irresistible topping for toast, yoghurt or cottage cheese – a great way to give brekkie or brunch a boost. This recipe makes 8 servings and will keep for up to 3 days in the fridge.

Ingredients

  • 300g frozen or fresh blueberries
  • 1 lemon or orange, zest finely grated, juiced to give approx. 2 tbsp
  • 2 rosemary sprigs
  • 2 tbsp raw honey

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7. Spread out the blueberries in a large roasting tin, scatter with the lemon or orange zest and squeeze over the juice. Tuck the rosemary sprigs into the fruit. Roast in the oven for 25 mins or until the berries have released their juices and are thick, glossy and almost caramelised.
  • Step 2

    Remove from the oven and fold through the honey.
  • Step 3

    Remove the rosemary and spoon the jammy blueberries into a sterilised jar to store in the fridge, ready to serve as a breakfast topping.
