Jerk chicken wings

This recipe for Caribbean jerk chicken wings is easy to prep and simple to cook. It’s a recipe you’ll return to summer after summer (although they’re delicious at any time of the year). Perfect for a few nibbles with friends or as snacks for the big game, they’re as tasty as they are versatile.

Ingredients

  • 1.2 kg of organic chicken wings
  • 3.5 tbsp of jerk seasoning
  • 1 tsp of onion powder
  • 1 tbsp of garlic powder
  • 0.5 tbsp of black pepper, coarsely ground
  • 3 tbsp of runny honey
  • 3 tbsp of barbecue sauce
  • 2 limes, quartered

Method

  • Step 1

    Trim any errant feathers or hairs off the wings. Using a serrated knife, cut 1 or 2 diagonal incisions into each wing.
  • Step 2

    Place all the wings in a bowl and add 3 tbsp of jerk seasoning, onion powder, garlic powder and black pepper. Using your hands (wear disposable gloves if you like), massage the wings, ensuring you get the mixture inside all of the incisions.
  • Step 3

    Cover the bowl and leave in the fridge for 1-8 hrs to marinate or continue on to the next step.
  • Step 4

    Preheat the oven to 200°C/180°C fan/gas 6. Line a large tray with baking paper and place the marinated wings on the tray. It doesn't matter if they aren't spread out completely or if they are touching. Keep any remaining marinade for later.
  • Step 5

    Once the oven is hot, bake the wings for 30 mins. Meanwhile, add the honey, barbecue sauce and remaining 1/2 tbsp of jerk seasoning to the leftover marinade and stir to combine.
  • Step 6

    After 30 mins, remove the tray from the oven. Using a pastry brush or spoon, coat the tops of the wings with half of the marinade mixture. Place the tray back in the oven for 20-25 mins. At this point the chicken should be browning nicely but not yet fully cooked.
  • Step 7

    Remove the tray from the oven, flip the chicken wings over and coat them with what's left of the marinade mixture. Place back in the oven and cook for another 10 mins. The wings should now turn deep brown and begin to char.
  • Step 8

    Finally, turn up the heat to about 220°C/200°C fan/ gas 7, flip the chicken wings over again and cook for a final 5 mins. Remove the wings from the baking tray and place on a wire rack if you have one. Leave to cool for a few mins then dish up and serve with lime wedges.
