Ingredients
- 500g Baby Albert Bartlett Jersey Royals
- 1 rosemary sprig
- 1 lemon, quartered
- 2 tbsp olive oil
- 4 fish fillets, we used sea bass
Method
Step 1
Tear 2 large pieces of foil and lay on top of each other to create a double thickness sheet.Step 2
Tip the potatoes into the centre and add the rosemary, lemon wedges, olive oil and salt. Mix together then fold up the edges and seal.Step 3
Set on the BBQ and cook for 30 mins until just soft through when a skewer is inserted. Shake a few times during cooking.Step 4
Once the potatoes are cooked, remove and set aside. Add the fish fillets to the BBQ then cook for 2 mins on each side.Step 5
Serve the fish with potatoes and your favourite vegetables or salad.
