Ingredients

  • 500g Baby Albert Bartlett Jersey Royals
  • 1 rosemary sprig
  • 1 lemon, quartered
  • 2 tbsp olive oil
  • 4 fish fillets, we used sea bass

Method

  • Step 1

    Tear 2 large pieces of foil and lay on top of each other to create a double thickness sheet.
  • Step 2

    Tip the potatoes into the centre and add the rosemary, lemon wedges, olive oil and salt. Mix together then fold up the edges and seal.
  • Step 3

    Set on the BBQ and cook for 30 mins until just soft through when a skewer is inserted. Shake a few times during cooking.
  • Step 4

    Once the potatoes are cooked, remove and set aside. Add the fish fillets to the BBQ then cook for 2 mins on each side.
  • Step 5

    Serve the fish with potatoes and your favourite vegetables or salad.
