
Kale Quesadillas

Celebrate kale with this quick meat-free meal –
we’ve used piadina flatbreads because they’re organic, but you can use any.Time and servings

Ingredients
- 1 tbsp of salsa, (add more if you like it spicy)
- 0.5 onion, (Thinly sliced into half moons)
- 1 clove of garlic, (grated)
- 2 tbsp of extra virgin olive oil
- 100 g of organic kale, (leaves finely chopped)
- 2 piadina flatbreads
- 150 g of cheddar, (grated)
Method
Step 1
Sauté onion and garlic in half the oil to soften, add kale and season. Stir until wilted, then add the salsa.Step 2
Heat a large, dry frying pan and lay a flatbread into it. Work quickly and scatter with cheese, put a handful of the kale mixture into the centre and finish with more cheese.Step 3
To fold, pull the top edge of the flatbread down over the filling to the centre. Hold that piece down, continue folding clockwise until the filling is covered (about 5 folds), flip over and set aside. Repeat with the second flatbread.Step 4
Heat the remaining oil in the pan and add the kalesadillas, folded side down. Cook for 4-5 mins until golden. The cheese inside will melt and seal the parcels. Flip to cook the other side. Serve whole or halved.
