Ingredients

  • 100g frozen diced onions
  • ½ tbsp olive oil
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 400g lamb mince
  • 2 tbsp tikka curry paste
  • ½ (400g) tin chopped tomatoes
  • 100g frozen peas
  • ½ tbsp mango chutney
  • ½ lime, juiced
  • 6 brioche burger buns
  • 1 little gem lettuce, shredded
  • 6 dollops Greek yoghurt
  • 6 tsp lime pickle
  • 1 green chilli, sliced (optional)
  • 600g French fries, to serve (optional)

Method

  • Step 1

    Put the onions into a dry frying pan and stir over high heat for a couple of mins to defrost. Add the oil and the garlic and ginger pastes; cook for 2-3 mins until golden. Tip in the lamb and cook until browned.
  • Step 2

    Stir in the curry paste and cook for 1-2 mins. Add the tomatoes and peas, then simmer over medium-high heat for a few mins. Stir in the mango chutney and lime juice; season to taste.
  • Step 3

    Meanwhile, split open and lightly toast the buns. Add some lettuce to the base of each, then top with a good spoonful of the lamb mix, a dollop of Greek yoghurt, a little lime pickle and, if you like, a few slices of chilli. Serve with a side of fries, if you fancy.
