Ingredients
- 100g frozen diced onions
- ½ tbsp olive oil
- 1 tsp garlic paste
- 1 tsp ginger paste
- 400g lamb mince
- 2 tbsp tikka curry paste
- ½ (400g) tin chopped tomatoes
- 100g frozen peas
- ½ tbsp mango chutney
- ½ lime, juiced
- 6 brioche burger buns
- 1 little gem lettuce, shredded
- 6 dollops Greek yoghurt
- 6 tsp lime pickle
- 1 green chilli, sliced (optional)
- 600g French fries, to serve (optional)
Method
Step 1
Put the onions into a dry frying pan and stir over high heat for a couple of mins to defrost. Add the oil and the garlic and ginger pastes; cook for 2-3 mins until golden. Tip in the lamb and cook until browned.Step 2
Stir in the curry paste and cook for 1-2 mins. Add the tomatoes and peas, then simmer over medium-high heat for a few mins. Stir in the mango chutney and lime juice; season to taste.Step 3
Meanwhile, split open and lightly toast the buns. Add some lettuce to the base of each, then top with a good spoonful of the lamb mix, a dollop of Greek yoghurt, a little lime pickle and, if you like, a few slices of chilli. Serve with a side of fries, if you fancy.
