
Kimchi and Cheddar Toast

Need a quick but satisfying lunch while WFH? This easy toastie uses kimchi for a great texture and spicy kick against the melted cheddar. This recipe shows the amount of ingredients needed for 6 toasties, but the method is written for assembling one at a time. This recipe makes 6 slices.Time and servings

Ingredients
- 6 slices sourdough, toasted, we used Ocado White Sourdough (500g pack)
- 300g cheddar, sliced, we used M&S British Mature Cheddar
- 190g kimchi, we used Sun Hee Hot & Spicy Kimchi
- 1 salad onion, finely sliced
Method
Step 1
Preheat the grill to high. Toast the sourdough bread (if not already done).Step 2
Assemble a single portion: Place 50g of the cheddar on 1 slice of the toast and place under the grill until melted, about 2mins.Step 3
Spoon 1tbsp of kimchi evenly over the melted cheddar.Step 4
Cut the toast in half, sprinkle over the salad onions and serve straight away.
