Kimchi Fried Noodles

This is one of Lisa Faulkner’s favourite fridge and freezer raid recipes. Lisa always has a jar of kimchi in her fridge and recommends eating it not only with these delicious kimchi fried noodles but with pretty much everything else, too. Feel free to experiment with this quick and easy recipe, adding whichever veg you fancy and trying different herbs, sauces and toppings.

Ingredients

  • 600 g of precooked udon noodles
  • 2 tsp of sesame oil
  • 2 tsp of soy sauce
  • 4 salad onions, thinly sliced
  • 1 garlic clove, grated
  • 80 g of frozen edamame beans or peas, defrosted
  • 2 pak choi, leaves chopped into strips and stalk into smaller pieces (optional)
  • 80 g of kimchi
  • 10 g of coriander, leaves only, roughly chopped

Method

  • Step 1

    Heat the noodles as per the packet instructions, then tip them into a hot wok with the sesame oil and soy sauce.
  • Step 2

    Toss through the salad onions, edamame beans or peas.
  • Step 3

    If adding pak choi, steam the leaves and stalk in a little water in a frying pan, then drain and add to the noodles.
  • Step 4

    Add the kimchi and stir until fully heated through.
  • Step 5

    Serve with a sprinkling of chopped coriander.
