Korean Beef Rolls

As the busy head chef and owner of award-winning Pomelo Edinburgh, Jun Au is also a pro at whipping up tasty meals at home, fast. “Korean Beef Rolls always satisfy the craving for something filling and moreish after a long service,” he says. “Here I’ve scaled things up for a family feast – great for rounding off a busy day when you want something tasty but can’t be bothered to cook.” For those extra-hungry nights, try serving with crispy potato wedges on the side – cook in an air fryer then toss with some spicy chip seasoning.

Ingredients

  • 500g extra-lean minute steak, thinly sliced
  • 200g Korean BBQ sauce
  • 200g frozen diced white onions
  • 2 tbsp frozen chopped garlic
  • 300g frozen mixed pepper slices
  • 1 tbsp vegetable oil
  • 75g grated cheddar and mozzarella, plus extra to scatter (optional)
  • 4 soft white submarine rolls, toasted
  • 1 handful coriander, chopped

Method

  • Step 1

    Place the steak in a bowl, pour over the Korean sauce and stir to coat; set aside for 10 mins.
  • Step 2

    Heat a dry pan over medium-high heat. Add the frozen onions, garlic and pepper slices; stir-fry for 5 mins, until all the liquid has evaporated. Add the oil and continue to cook until golden. Toss in the beef along with its marinade and cook for a couple of mins more. Stir in the cheese until melted.
  • Step 3

    Divide the beef mixture between the toasted rolls; scatter with a little more cheese, if liked, and a handful of coriander.
