
Lamb, Spinach & Couscous Stew

Ingredients
- 2 tbsp of olive oil
- 450 g of lamb shoulder, diced
- 180 g of spinach, stems off, washed well and chopped
- 250 g of couscous
- 2 cloves of garlic
- 500 ml of beef stock
- 150 ml of red wine
- 2 sprigs of parsley, chopped
- 400 g of carrots, sliced
- 0.5 tsp of fresh rosemary, chopped
- 1 large of onion, chopped coarsely
- 0.5 tsp of fresh mint, chopped
Method
Step 1
In a thick bottomed saucepan, heat the oil over a moderate heat and brown the lamb. Add the onion and the garlic and cook the mixture, stirring, for 10 minutes, or until the onion is golden.Step 2
Add 1 litre of water, broth, wine, parsley, and carrot, bring the liquid to a boil, skimming the froth, and simmer the mixture, uncovered, for 2 hours.Step 3
Add the mint, the rosemary, and the spinach, bring the liquid to a boil, and add the couscous. Boil the stew, stirring, for 5 minutes, until the couscous is tender, and season it with salt and pepper.
