
Miso Lamb Chops

The honey miso marinade adds a rich umami flavour to the smoky lamb chops, which are carefully cooked over hot coals. This miso lamb cutlets recipe is a great reason to dust off the barbecue and get it fired up, no matter what the weather is like outside.
Serve these cutlets with a colourful salad, which will provide plenty of crunch, and perhaps a portion of wholegrain rice.Time and servings

Ingredients
- 4 tbsp of white miso
- 2 tbsp of mirin
- 2 tbsp of sake
- 2 cloves of garlic, crushed
- 8 lamb cutlets
- 2 tbsp of brown miso
- 2 tbsp of honey
- 2 tsp of soy sauce
Method
Step 1
Mix the brown miso, white miso, honey, mirin, sake, soy sauce and garlic together. Place the lamb cutlets in a flat dish or zip-lock bag, and pour over the marinade. Cover and place in the fridge for at least 1 hr, or overnight if you have time.Step 2
When you are ready, pop them on the barbecue, turning every 2 mins for about 8-10 mins until they are cooked. Keep close watch as miso can burn easily.
