
Lamb Tagine

Ingredients
- 25 g of flaked almonds, toasted
- 570 ml of lamb stock
- 2 tsp of tomato puree
- 25 g of sultanas
- 450 g of diced lean lamb
- 2 tsp of honey
- 1 onion, chopped
- 1 clove of garlic, chopped
- 3 tsp of paprika
- 1 tsp of ground cinnamon
- 2 tsp of turmeric
- 55 g of dried apricots
- 1 tbsp of fresh coriander, chopped
- 1 tbsp of fresh parsley, chopped
- 1 tbsp of flora
- 800 g of chopped tomatoes
Method
Step 1
Preheat oven to gas mark 3/170°C/150°C fan/325°F.Step 2
Toss the lamb with black pepper, paprika, cinnamon and turmeric, coating evenly.Step 3
Heat Flora Cuisine in a casserole dish, add in onion and garlic and fry until softened.Step 4
Add spiced lamb and fry until the meat is browned, around 5 minutes, stirring now and then.Step 5
Add in the remaining ingredients, mix well and bring to the boil. Cover and transfer to the oven and cook for 1 hour 30 minutes. Garnish with the fresh coriander and parsley and serve with rice.
