
Leek and Chorizo Frittata

This is a great mid-week meal and a fantastic way of using up ingredients in your fridge. Cheese, bacon, pepper and spring onions all make welcome additions.Time and servings

Ingredients
- 50 g of chorizo, thinly sliced
- 1 large handful of basil, roughly chopped
- 0.25 tsp of chilli flakes
- 1 tbsp of olive oil
- 2 leeks, washed and thinly sliced
- 6 medium eggs
- 1 pack of rocket, to garnish
Method
Step 1
Preheat the grill to high. Heat a medium non-stick ovenproof frying pan over a medium heat. Add the Lupak Cooking Liquid followed by the sliced leeks and chorizo. Saute for5 minutes stirring occasionally.Step 2
In a large bowl whisk together the eggs, basil, chilli flakes and seasoning.Step 3
Add the egg mix to the sauteed leeks and chorizo in the pan; cook for 1 minutes without stirring.Step 4
Transfer the pan to the grill and cook for 3 minutes or until golden brown. Remove the frittata from the frying pan onto a serving plate using a spatula. Slice into wedges and garnish with a handful of rocket.
