
Leftover mac and cheese

To try and inspire everyone to waste less, we’ve
dusted off our favourite Mac and Cheese recipe, handily called Leftover Mac and
Cheese.Time and servings

Ingredients
- 75 g of gruyere or other nutty cheese
- 50 g of plain flour
- 50 g of butter
- 1 pint of milk
- 0.5 pint of single cream
- 1 tsp of english mustard
- 150 g of cheddar
- 75 g of emmental
- 500 g of pasta
Method
Step 1
Preheat the oven to 180 degrees C.Step 2
Cook the pasta for 8 minutes in a large pot of salted boiling water. The pasta should be slightly undercooked as it will finish cooking in the dish. Save half a mug of the cooking water to adjust the consistency of the cheese sauce.Step 3
While the pasta is cooking, make the roux as below.Step 4
Mix the milk and cream together in a jug.Step 5
Melt the butter in a saucepan and when is starts to foam, add the flour. Whisk the mixture on the heat for 2-3 minutes or until it starts to go a light golden brown.Step 6
Remove from the heat and slowly add the milk, whisking between each addition of milk. When you have added half of the milk mixture, return the sauce to the heat and continue to add the milk mixture whilst whisking.Step 7
Heat the sauce until it boils then simmer for 3 minutes. Continually whisking.Step 8
Remove from the heat and allow to settle, then add the cheese, mustard and season with salt to taste and lots of black pepper.Step 9
Add the pasta to the sauce and loosen the sauce with the pasta water if necessary. This is the time to add any extra bits to your bake!Step 10
Pour the mixture into a baking dish and sprinkle the cheese on top. Bake in the oven for 35 minutes or until the top is crispy and bubbling.
