
Leg of Lamb with Garlic, Rosemary and Anchovies

Don't be afraid of the anchovies in this recipe - they dissolve into the lamb and simply intensify the flavour of the meat, without adding any 'fishiness'!Time and servings

Ingredients
- 10 fillets of anchovies
- 4 cloves of garlic, thinly sliced
- 4 sprigs of rosemary
- 2 kg of leg of lamb
- 1 cup of olive oil
Method
Step 1
Preheat the oven to 200oC.Step 2
Stab holes evenly around the leg of lamb. Stuff every hold with either an anchovy, slice of garlic, or sprig of rosemary.Step 3
Pour the olive oil over the lamb. Cover the dish with foil and cook for around 2 hours, but check after about an hour and 20 minutes.
