Lemon, Almond and Chilli Charred Broccoli

Serve this zesty charred broccoli dish from M&S with grilled fish or meat for a delicious touch of crunch and colour. Cooking the broccoli under the grill brings out a deep, nutty flavour that goes beautifully with rich lemon butter and fiery chilli.

Ingredients

  • 1 large head M&S Select Farms broccoli, cut into wedges
  • 1 tbsp olive oil, plus a splash
  • 50g M&S flaked almonds
  • ½ vegetable stock pot
  • 30g salted butter, fridge cold and diced into 1cm cubes
  • ½ lemon, juice and zest
  • 1 red chilli, thinly sliced

Method

  • Step 1

    Heat the grill to medium. Line a baking tray with foil then add the broccoli, oil, a little seasoning then toss together. Grill for 7-10 mins, until golden brown.
  • Step 2

    Meanwhile, heat a frying pan over a medium heat with a little more olive oil. Add the almonds and fry for 3–4 mins until golden, then set aside to drain on kitchen towel.
  • Step 3

    Pour 200ml boiling water into a pan set ver a medium-high heat, add the stock pot and heat until dissolved. Increase the heat and boil until reduced by half.
  • Step 4

    Gradually whisk the cold butter into the reduced stock until you have a thick, glossy sauce, then whisk in the lemon juice.
  • Step 5

    Serve the charred broccoli on a platter and pour over the butter. Scatter with the almonds, red chilli and lemon zest to finish.
