
Lemon and Thyme Lamb Steaks with Pepper and Potato Skewers

Early summer sees us Brits emerge blinking into the sunlight, clutching the barbecue tongs. This recipe is great for enjoying outdoors when the sun shines, yet easy enough to cook indoors if the weather turns.Time and servings

Ingredients
- 600 g of new potatoes, boiled for 15 minutes or until cooked but still firm
- 3 tbsp of fresh thyme leaves
- 1 garlic clove, crushed
- 1 lemon, juiced and zested
- 3 tbsp of olive oil
- 2 peppers, cut into chunks
- 450 g of (approx) lamb rump steaks
- 1 tub of tzatziki, to serve (optional)
Method
Step 1
For the lamb: mix the garlic, thyme, lemon juice and zest and the olive oil in a bowl. Coat the lamb and leave to marinate for 30 minutes. Grill the steaks to your preference.Step 2
For the skewers: thread the potatoes and peppers onto skewers and brush with the remaining marinade. Grill for about 10 minutes, turning frequently. Serve with tzatziki.
