Lemon Pepper Chicken Strips with Spicy Ketchup

These quick, crunchy chicken goujons, flavoured with zesty lemon and black pepper, are the perfect finger food. If you have a bit longer and want to avoid using oil, you can bake in the oven for 30-35 mins instead of frying them. If you have any leftover, they're great in lunchboxes the next day – just chill in the fridge after cooking.

Ingredients

  • 4 tbsp of plain flour, seasoned
  • 1 medium free-range egg, beaten
  • 100 g of breadcrumbs
  • 400 g of mini chicken breast fillets, slice any larger ones in half lengthways
  • 4 tbsp of spicy ketchup, to serve
  • 2 lemons, zested
  • 1.5 tbsp of black pepper, coarsely ground
  • 3 tbsp of vegetable oil

Method

  • Step 1

    Place the flour into a bowl and the beaten egg in another. In a third bowl, mix the breadcrumbs with the lemon zest and pepper.
  • Step 2

    Heat the oil on medium-high in a large frying pan.
  • Step 3

    Dip and coat the chicken pieces in the flour, then in the beaten egg and finally in the breadcrumb mixture. Shake off the excess and lay them in the now hot oil. Fry for 4 mins each side, or until crisp, golden and cooked through.
  • Step 4

    Serve with a spicy ketchup dip.
