Ingredients
- 2 cloves of garlic, grated or finely chopped
- 1 pinch of turmeric, ground
- 900 ml of vegetable stock
- 5 cm of fresh root ginger, grated
- 1 pinch of garam masala
- 300 g of red lentils
- 1 tbsp of olive oil
- 1 onion, finely chopped
- 1 lemon, grated zest and juice
- 2 tomatoes, skinned and chopped
- 1 handful of fresh coriander, finely chopped
Method
Step 1
Heat the oil in a frying pan over a low heat. Add the onion and a pinch of salt, and sweat for 5 minutes until soft and translucent. Stir in the garlic, ginger, turmeric, and garam masala, and cook for a minute.Step 2
Stir in the lentils and lemon zest, pour over the stock, and simmer for about 20 minutes until the lentils are cooked.Step 3
Season well with salt and black pepper, and stir through the lemon juice, tomatoes, and coriander. Serve hot with naan bread or chapattis.
