
Lemony Lamb Souvlaki with Minted Ttzatziki

Ingredients
- 2 tsp of fresh oregano, roughly chopped
- 50 ml of olive oil
- 1 clove of garlic, crushed
- 1 tbsp of olive oil
- 1 lemon, zest and juice
- 2 tsp of fresh thyme leaves
- 2 cloves of garlic, crushed
- 25 ml of red wine
- 1 tsp of mint
- 175 g of greek yoghurt
- 500 g of rolled shoulder of lamb
- 4 flatbreads
- 0.5 cucumber
- 4 dashes of chilli sauce
- 1 pinch of sumac
Method
Step 1
Place the lamb in a mixing bowl with the herbs, garlic, lemon zest, red wine and half the olive oil. Cover and chill for 2 hrs.Step 2
When the lamb has finished marinating, mix the remaining olive oil with the lemon juice and pour over the lamb. Thread onto skewers (allow 2 per person).Step 3
Grill on a high heat until cooked to your taste. Sprinkle over the sumac.Step 4
Mix all the tzatziki ingredients (cucumber, greek yoghurt, garlic, mint, olive oil). Serve the salad and lamb on the flatbreads, then top with tzatziki and a splash of chilli sauce.
