This easy salmon traybake keeps things simple while delivering fresh, vibrant flavours. Crispy potatoes, tender salmon and crunchy greens are finished with lemon butter and served with a cool, herby yoghurt on the side. Ingredients

  • 800g white potatoes, diced into 2cm pieces
  • 1 tbsp olive oil
  • 1 lemon
  • 30g salted butter, softened
  • 10g dill, finely chopped
  • 10g mint, finely chopped
  • 200g Greek-style yoghurt
  • 4 M&S Caledonian Gold salmon fillets
  • 300g Tenderstem broccoli

Method

  • Step 1

    Heat the oven to 200°C/ 180°C fan/ gas 6. Tip the potatoes onto a large baking tray (about 25cm x 35cm). Toss with the oil then season and roast for 30 mins until golden and starting to crisp.
  • Step 2

    While the potatoes are roasting, mix the lemon zest into the softened butter and season then set aside
  • Step 3

    In a small bowl, mix the lemon juice, dill, mint and yoghurt. Season to taste and chill until ready to serve.
  • Step 4

    After 30 mins, remove the tray from the oven. Add the salmon fillets to the potatoes and dollop the lemon butter over the fish. Nestle the Tenderstem broccoli into the tray. Return to the oven and bake for a further 15–17 mins until the salmon is cooked through and the broccoli is just tender.
  • Step 5

    Serve the salmon, potatoes and Tenderstem with a generous spoonful of the herby yoghurt.
