
Lentil and Sausage Casserole

Wholesome and hearty, this lentil and sausage casserole has plenty of rich, deep flavours. Serve with your choice of green vegetables for a truly satisfying meal.Time and servings

Ingredients
- 2 carrots, diced
- 250 g of green lentils
- 1 tbsp of oil
- 560 g of free range casserole sausages
- 1 onion, sliced thinly
- 2 cloves of garlic, crushed
- 1 stick of celery, diced
- 1 vegetable stock cube
- 400 ml of passata
Method
Step 1
Heat the oil in a large pan with a well fitting lid and cook the sausages, turning frequently until browned.Step 2
Remove the sausages and set to one side.Step 3
Add the onion and cook for 5 minutes until softened. Stir in the garlic, celery and carrots and cook for 2 minutes before adding the lentils, stirring well to mix.Step 4
Dissolve the stock cube in 500ml of boiling water and add to the pan along with the passata. Stir and return the sausages to the pan.Step 5
Bring to the boil then reduce the heat to a gentle simmer and cover. Cook the lentils for 25 minutes, stirring occasionally, until tender.Step 6
If time allows, chill for 30 minutes before baking in a preheated oven at 190c/Gas5 for 15-20 minutes until golden and crisp.Step 7
Remove the lid and cook for a further 5-10 minutes to thicken.Step 8
Serve with a green vegetable of your choice.
