Ingredients

  • 1 tsp english mustard
  • 1 tbsp natural yoghurt
  • 3 tbsp sherry vinegar
  • 1 tsp sea salt
  • 50ml extra-virgin olive oi
  • 2 heads Dolce Romana lettuce
  • 2 heads Red Gem lettuce
  • 2 tbsp walnut pieces

Method

  • Step 1

    Whisk together the mustard, yoghurt, vinegar and sea salt. Add the oil in a steady stream, whisking until emulsified.
  • Step 2

    Separate the lettuce heads and toss with the dressing. Scatter over the walnut pieces and serve.
