A happy marriage of Mexican flavours, it gets its spice and zing from mixologist Kate Hawkings’ simple Lime and Chilli Syrup. Try mezcal instead of tequila if you prefer – and for an even more fiery kick, swap the ginger ale for ginger beer.

Ingredients

  • 50 ml of silver tequila
  • 100 ml of ginger ale
  • 1 lime, cut into wedges, scored with a zester, to garnis
  • 1 chilli slice, to garnish

Method

  • Step 1

    Pour the tequila and 30 ml Lime and Chilli Syrup (see above) into a tall glass filled with ice.

  • Step 2

    Top up with ginger ale; garnish with the lime wedge and slice of chilli.
