
Linguine with Lemon, Chilli, Pine Nuts & Herbs

Ingredients
- 75 g of pine nuts, toasted
- 400 g of linguine
- 6 tbsp of extra virgin olive oil
- 2 lemons, zest and juice
- 20 g of flat-leaf parsley
- 60 g of parmesan, grated
- 1 red chilli, deseeded and finely chopped
- 2 cloves of garlic, peeled and finely sliced
- 4 bay leaves
Method
Step 1
Bring a large pan of water to the boil, add salt and cook the linguine until it’s al dente.Step 2
While the pasta cooks, warm the olive oil, garlic and bay leaves in a large frying pan, to allow them to infuse the oil – not cook.Step 3
After 5 mins, remove and discard the bay leaves and add the pine nuts, lemon zest and juice.Step 4
Drain the pasta, saving a little cooking water. Tip the pasta into your infused oil with the reserved pasta water – and keep gently folding and stirring. Add the herbs, cheese, capers and chilli.Step 5
Season with salt and black pepper, then serve straight away with an extra drizzle of olive oil, if you like. This recipe is delicious as it is, but you can also add courgette, cherry tomatoes, prawns or asparagus.
