
Linguine with Prawns

Pasta is always a hit and this recipe for linguine with prawns is guaranteed to carry on that trend. A favourite with the Lactofree Team, try serving with a light salad and a crisp white wine.Time and servings

Ingredients
- 8 oz of linguine
- 3 tbsp of olive oil
- 1 large of onion, chopped
- 2 cloves of garlic, chopped
- 16 fresh prawns
- 2 tbsp of lactofree
- 0.25 cup of fresh herbs, such as dill or parsley
- 1 cup of dry white wine
- 1 pinch of pepper
Method
Step 1
Bring about 6 cups of salted water to a boil in a medium-sized stock pot. Add the linguine and cook until al dente. Drain in a colander and set aside.Step 2
Heat the olive oil in the stock pot over medium heat. Add the onion and garlic and cook, stirring occasionally until the onions are translucent and fragrant, about 6 minutes. Add the white wine and bring to a boil. Turn down the heat to low and let the mixture simmer until the liquid is reduced by half, about 10 minutes.Step 3
Once the liquid is reduced, add the prawns, cover the pot and simmer for 5 minutes.Step 4
Add the pasta back into the pot along with the Lactofree, salt and fresh herbs. Cook until desired heat and consistency, add salt and pepper to taste and serve immediately.
