Ready in less than 30 mins these Loaded Doritos are perfect for summer hosting. We’ve used ready made Mexican Pibil Fajita & Taco seasoning for a speedy cheat, but this would be delicious with any of your favourite Mexican sauces and spices. We’ve used classic black beans but why not try with nutty carlin peas next time for a British twist?

Ingredients

  • 1 tbsp oil
  • 1 red onion, finely chopped
  • 330ml Mexican Pibil Fajita & Taco Sauce
  • 570g jar black beans or carlin peas, drained and rinsed
  • 1 corn on the cob
  • 2 large tomatoes, deseeded and diced
  • 4 tbsp pink pickled onions, roughly chopped
  • 25g coriander, chopped
  • 2 jalapenos, finely chopped sliced
  • 1 avocado, chopped
  • 2 limes, quartered
  • 2 x 180g bag Doritos Cool Original
  • 150g grated mozzarella and cheddar
  • 100g soured cream

Method

  • Step 1

    Heat the oil in a pan over a medium heat. Add the onion and fry until softened and golden brown. Add the cooking sauce then bring to a simmer.
  • Step 2

    Tip in the black beans, or carlin peas, then stir and simmer for 5 mins.
  • Step 3

    Meanwhile, put the corn in the microwave for 4 mins to steam cook. Remove and once cool enough to handle, cut the corn from the cob.
  • Step 4

    Add the tomatoes to a mixing bowl with the onion, coriander, jalapenos and avocado. Add a pinch of salt then squeeze over the juice of 1 lime.
  • Step 5

    Heat the grill to medium. Spread the Doritos out over a shallow baking sheet then spoon over the black bean mixture, grated cheese and corn. Grill for 3-5 mins until golden and the cheese has melted.
  • Step 6

    Spoon over some of the tomato mix then serve the rest on the side with soured cream and extra limes.
