By OcadoLifePublished on 06 October 2026You can’t go wrong with a Loaded Jacket Potato, so try this delicious version for an easy, meat-free dinner that everyone will love. We’ve used frozen baked spuds, but you can bake your own of course. And feel free to swap out the salad onions and chilli flakes for other toppings if you like, such as chives, pumpkin seeds or fresh coriander. A green salad makes a great accompaniment.

Ingredients

  • 4 frozen baked jacket potatoes
  • 2 (250g) pouches Jamie Oliver Barbecoa Beans
  • 2 good handfuls grated cheese
  • 4 tbsp guacamole
  • 4 tbsp Greek-style yoghurt
  • 4 salad onions, chopped (optional)
  • 1 large pinch chilli flakes (optional)

Method

  • Step 1

    Oven bake the jacket potatoes from frozen according to pack instructions until the middles are fluffy and the skins crisp. When cool enough to handle, halve them and scoop out the flesh into a bowl (reserve the skins).
  • Step 2

    Mix the potato flesh with the beans and a good handful of the cheese, then spoon back into the skins. Scatter with more cheese and return to the oven until melted and golden.
  • Step 3

    Serve topped with dollops of guacamole and yoghurt, scattered with the salad onions and a pinch of chilli flakes, if you like.
