
Loaded Poppadums

These Loaded Poppadums are the perfect sharing snack. Inspired by the delicious Indian street food dish Chaat, we’ve used poppadums and piled them high with a zesty herb chutney, tart yoghurt and tangy tamarind drizzle. Served sprinkled with pomegranate and cucumber then a generous handful of Bombay Mix, these are gone in moments. Time and servings

Ingredients
- 1 large handful coriander
- 1 large handful mint
- 2 limes, juice only
- ½ tsp ground cumin
- 3 dates
- 2 tbsp tamarind paste
- ½ tsp roasted garam masala
- 150g plain yoghurt
- 2 x 65g bag poppadums
- ½ red onion, finely chopped
- 4cm piece cucumber, deseeded and finely chopped
- 1 large handful Bombay Mix, we used Howdah’s
- 3 tbsp pomegranate seeds
Method
Step 1
Put the herbs, most of the lime juice, cumin and a splash of water into a high powered blender and whizz until smooth. Set aside.Step 2
Put the dates, tamarind, garam masala, a pinch of salt and a splash of water into a clean attachment of the high powdered blender and whizz until smooth. Set aside.Step 3
Mix the yoghurt and remaining lime juice in a bowl until smooth.Step 4
Tip the popadums out over a serving platter. Drizzle with the yoghurt, herb sauce then date sauce. Sprinkle with onion, cucumber, pomegranate seeds and bombay mix to serve.
