
Lotus Biscoff and Chocolate Mousse

Ingredients
- 8 lotus biscoff biscuits
- 200 g of dark chocolate
- 200 g of lotus biscoff smooth spread
- 5 eggs
- 200 ml of whipping cream
Method
Step 1
Heat the chocolate and Biscoff Smooth Spread together in the microwave until melted. Leave to rest before stirring.Step 2
Separate the eggs and beat the egg whites with a whisk until stiff. Set aside. Whip the cream and set aside.Step 3
Add the egg yolks one by one to the Biscoff and chocolate mixture, stirring thoroughly after adding each yolk.Step 4
Carefully fold the egg whites into the mixture and then fold in the whipped cream.Step 5
Spoon the chocolate and Biscoff mousse into glass dishes and put in the fridge to firm.Step 6
Decorate with a Lotus Biscoff biscuit on top just before serving.
