
Lunar New Year Prosperity Toss Salad

“In Malaysia and Singapore, a Prosperity Toss Salad is a staple at Lunar New Year celebrations, but it’s a delightful dish to enjoy at other times of year too,” says Mandy Yin – chef/owner of Sambal Shiok Laksa Bar in London, and author of two Malaysian cookbooks. “Traditionally, everyone at the table stands up and tosses the salad in the air with chopsticks, mixing everything together – the higher the toss, the more luck and prosperity will lie ahead! The dressing typically contains plum sauce, but my version uses marmalade for a uniquely British flavour twist – a fun fusion of cultures.”

Ingredients
- 2 tbsp smooth marmalade
- 1 tsp toasted sesame oil
- 1 tsp clear honey
- ¼ tsp Chinese five spice
- 1 pinch ground white pepper
- 1 pinch mild chilli powder
- 200g smoked salmon, finely sliced
- ½ cucumber, deseeded and cut into matchsticks
- ½ (approx.) red grapefruit, peeled into segments, then roughly chopped to give 100g
- 100g carrots, cut into matchsticks
- 100g red cabbage, finely sliced
- 1 eating apple, cored and cut into matchsticks
- 1 (50g) bunch coriander, leaves picked
- ½ lime
- 2 tbsp roasted sesame seeds
- 1 handful lightly salted crisps, crushed (check for gluten free)
Method
Step 1
In a small bowl, mix the marmalade, sesame oil, honey, Chinese five spice, white pepper and chilli powder with 1 tbsp just-boiled water, until runny and smooth. Set aside until needed.Step 2
Place the smoked salmon in the centre of a round serving platter, then arrange the cucumber, grapefruit, carrot, red cabbage and apple around it in little mounds, alternating the colours for an attractive display. Split the coriander leaves into two piles and arrange on the platter. Squeeze the lime over the apple to avoid discoloration.Step 3
Just before serving, pour over the dressing, then scatter with the sesame seeds and crushed crisps. Bring to the table and invite everyone to toss for prosperity!
