
Luxury Carrot Cake

A spongy and tasty British carrot cake with a gorgeous cream cheese icing.Time and servings

Ingredients
- 115 g of plain flour
- 175 g of cream cheese
- 3 carrots, grated
- 13 tbsp of hellmann's real mayonnaise
- 175 g of self-raising wholemeal flour
- 1 tsp of bicarbonate of soda
- 350 g of caster sugar
- 4 medium eggs
- 50 g of walnuts
- 0.5 lemon, zested
- 2 tbsp of icing sugar
- 2 tsp of cinnamon
Method
Step 1
Preheat the oven to 170C for 50-60 minutes.Step 2
Place all cake ingredients (all ingredients apart from the cream cheese, lemon and icing sugar) in a mixing bowl and beat together until well mixed.Step 3
Spoon into a greased and lined 22cm round cake tin and bake in the oven for 35 minutes.Step 4
Cool the sponge on a wire tray. Mix all the icing ingredients (175g cream cheese,1/2 lemon (zested) and 2 tbsp of icing sugar) together and spread over the cold cake. Decorate with some thin slices of carrot and enjoy!
