A spongy and tasty British carrot cake with a gorgeous cream cheese icing.

Ingredients

  • 115 g of plain flour
  • 175 g of cream cheese
  • 3 carrots, grated
  • 13 tbsp of hellmann's real mayonnaise
  • 175 g of self-raising wholemeal flour
  • 1 tsp of bicarbonate of soda
  • 350 g of caster sugar
  • 4 medium eggs
  • 50 g of walnuts
  • 0.5 lemon, zested
  • 2 tbsp of icing sugar
  • 2 tsp of cinnamon

Method

  • Step 1

    Preheat the oven to 170C for 50-60 minutes.
  • Step 2

    Place all cake ingredients (all ingredients apart from the cream cheese, lemon and icing sugar) in a mixing bowl and beat together until well mixed.
  • Step 3

    Spoon into a greased and lined 22cm round cake tin and bake in the oven for 35 minutes.
  • Step 4

    Cool the sponge on a wire tray. Mix all the icing ingredients (175g cream cheese,1/2 lemon (zested) and 2 tbsp of icing sugar) together and spread over the cold cake. Decorate with some thin slices of carrot and enjoy!
