Macaroni Cheese Topped with Crispy Bacon

Bubbling, golden and irresistible this Maille macaroni cheese is topped with chunks of cheddar, leeks and crispy bacon.

Ingredients

  • 225 g of macaroni
  • 2 tsps of maille dijon originale mustard
  • 50 g of butter
  • 50 g of cheddar, grated
  • 1 pinch of salt
  • 1 handful of parsley, chopped
  • 4 rashers of back bacon, thinly sliced and fried crisp
  • 50 g of flour
  • 600 ml of milk
  • 1 large pinch of black pepper
  • 1 leek

Method

  • Step 1

    Cook the macaroni in lightly salted boiling water until just tender - about 10 minutes. At the same time make the sauce.
  • Step 2

    Melt the butter in a pan, stir in the flour and cook for 1 minute, whilst stirring. Gradually add milk, still stirring until the mix is thickened. Once thickened add the grated cheese, Maille Dijon Originale mustard and season with salt and freshly ground black pepper. Stir in the leek rings
  • Step 3

    Once the macaroni is cooked, drain and then place back in the saucepan. Pour the mixture over the drained macaroni and stir through. Pour everything into a baking dish and cook in your pre-heated oven for 20 minutes, or until bubbling and golden.
  • Step 4

    Serve sprinkled with parsley and the crispy bacon (optional).
