Ingredients
- 300 g of tenderstem broccoli
- 2 sweet potatoes, cut into chunky chips
- 8 frozen mackerel fillets, not the smoked variety
- 3 tbsp of olive oil
- 1 tbsp of za'atar
- 1 lemon, zest and a little juice for squeezing
- 3 tbsp of harissa
- 30 g of fresh coriander, roughly chopped
- 4 tbsp of tzatziki, to serve (optional)
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 5 and spread the broccoli and potatoes onto a large roasting tray, season, sprinkle over the za’atar and drizzle the oil. Roast for 20 mins until the veg are beginning to soften and catch around the edges.Step 2
Meanwhile, lay the fish on a plate and smear the harissa all over.Step 3
Remove the veg from the oven, place the fillets on top, grate over the lemon zest and return to the oven. Cook for 10 mins or until the fish is cooked through.Step 4
Serve with tzatziki, coriander and a squeeze of lemon.
