
Malaysian Grilled Fish

Cooking with seafood is often speedy and straightforward, and this Malaysian-inspired halibut recipe is no exception. It was created by the brains behind Asian food brand Mak Tok, and uses the producer's Signature Chilli Paste to give the white fish a satisfying kick. Charred slightly under the grill and served with a homemade dipping sauce, it's a real winner. Time and servings

Ingredients
- 1 tbsp of white wine vinegar
- 6 tbsp of chilli paste
- 1 tsp of salt
- 0.25 onion, finely diced
- 1 tbsp of sugar
- 1 tbsp of soy sauce
- 0.5 lime, juice only
- 2 halibut fillets (approx. 210g)
Method
Step 1
Turn on the grill and place a baking tray underneath it to heat. Prepare the dipping sauce by mixing the vinegar, onion, sugar, 2 tbsp water, soy sauce, and lime juice together in a bowl. Set aside.Step 2
Gently sauté Mak Tok’s Signature Chilli Paste in a pan on a low heat until it starts to sizzle. Continue stirring it for 1 min before removing the pan from the heat.Step 3
Rub the salt on the halibut fillets then spread the sautéed chilli paste on them and allow to marinate for 10 mins.Step 4
Place a sheet of baking paper on the heated pan and top with the halibut fillets. Grill each side for 3 mins or until slightly charred.Step 5
Serve immediately with the dipping sauce.
