
Mango, Saffron Kefir Pudding

This recipe is inspired by the Indian yoghurt-based dessert shrikhand. Our version uses kefir, a cultured dairy product that's full of helpful bacteria that are beneficial for our guts. This refreshing, sunshine-coloured pud is a great one for the warmer months, thanks to its tangy and fruity flavours. It only takes 10 minutes to whip up, too. Time and servings

Ingredients
- 400 g of bio-tiful kefir-quark original
- 2 mangoes, cut into cubes
- 0.25 tsp of cardamom, ground in a pestle and mortar
- 1 large pinch of saffron
- 2 tbsp of runny honey, (or you can use icing sugar)
- 1 handful of pistachio nuts, chopped or crushed
Method
Step 1
Empty the kefir quark into a bowl and separately blend 1 mango.Step 2
In a cup, add a splash of hot water to the saffron strands to infuse and colour. Stir this, the cardamom and blended mango into the kefir until combined. Add the honey to taste (or icing sugar if you want it to feel more dessert-like).Step 3
Top with the remaining chopped mango followed by the pistachios and an extra drizzle of honey, if you like.
