
Mango and Halloumi Salad with Lambs Lettuce

Ingredients
- 1 bag of lambs lettuce
- 2 tbsp of white wine vinegar
- 500 g of halloumi
- 3 tbsp of olive oil
- 1 handful of roasted pinenuts
- 2 mangoes, peeled and sliced
- 1 handful of mint, chopped
Method
Step 1
Slice the halloumi and place in an oven proof dish. Place the dish under a hot grill until the cheese begins to bubble and slightly browns. Turn over and lightly grill the other side.Step 2
Meanwhile prepare the mango on the plates dressed with liberal helpings of salad. Mix a light dressing with 3 tbsp olive oil, 2 tbsp white wine vinegar, salt and pepper.Step 3
Take the halloumi from under the grill and lay on the plates alternating with the fresh mango. Sprinkle with the pine nuts, chopped mint and drizzle the dressing over the top. Serve immediately with crusty bread.
