Paletas are fruity Mexican ice lollies, and these Mango and Lime Paletas with Sweet Chilli Dust are a simple mango version from author, recipe writer and co-founder of the Wahaca group of Mexican restaurants, Thomasina Miers. Brilliant as a no-bake dessert for a party, they’re made all the more special by the sweet ’n’ spicy chilli dust that brings fun margarita vibes (but leave it off for the kids). Ingredients

  • 500g mango flesh (from approx. 4 very ripe mangoes)
  • 100g caster sugar
  • 4 limes, 3 juiced (to give approx. 100ml juice) and 1 zested
  • 1 orange, juiced (to give approx. 75ml juice)
  • 2 tbsp tamarind paste (optional)
  • 10g aleppo pepper flakes
  • 10g fine sea salt

Method

  • Step 1

    To make 6 standard lollies, in a blender, blitz the mango flesh, 50g of the sugar, the lime juice and the orange juice until smooth, adding the tamarind paste if you want an additional sherbety taste. Divide among 6 lolly moulds and freeze for at least 4 hrs, or ideally overnight.
  • Step 2

    For the chilli dust, put the pepper flakes, salt and lime zest into a spice grinder. Blitz for 20 secs, then add the remaining 50g sugar and blitz for a further 20 secs. Alternatively, grind them together using a pestle and mortar.
  • Step 3

    Turn out the lollies onto a dish filled with ice. (Dip them very briefly into hot water to release.) Lightly sprinkle the tips with the sweet chilli dust and serve at once. They will keep frozen for up to 1 month.
