Maple, Pear and Pecan Porridge

Set yourself up for the day with this Maple, Pear and Pecan Porridge, a balanced bowlful of slow-release grains, fruit and nuts from recipe writer and chef Esther Clark. If the recipe makes more fruit topping than you need, you can enjoy any leftover pears as a delicious topping for pavlova along with gingery cream, and the poaching liquid can be added to a warming hot apple toddy with a splash of calvados.

Ingredients

  • 4 pears, peeled, halved lengthways and cored
  • 1 litre of cloudy apple juice
  • 4 tbsp of maple syrup
  • 1 heaped tsp of ground cinnamon or 3 cinnamon sticks
  • 100 g of ocado own range white, black and red quinoa
  • 800 ml of milk (any type; we used oat milk)
  • 150 g of rolled oats (gluten free if required)
  • 2 tbsp of flaxseed
  • 1 tsp of vanilla bean paste
  • 50 g of pecan nuts, finely chopped
  • 0.5 tbsp of sesame seeds (optional)
  • 0.5 tbsp of poppy seeds (optional)

Method

  • Step 1

    Put the pears, apple juice, 2 tbsp maple syrup and the cinnamon in a pan; bring to a boil. Lower the heat and simmer for 10-15 mins or until the pears are tender. Turn off the heat; leave to cool in the poaching liquid for at least 30 mins. If making ahead, chill overnight.
  • Step 2

    Meanwhile cook the quinoa as per pack instructions, then drain and set aside. If making ahead, leave to cool, then chill overnight.
  • Step 3

    To serve, warm the milk and a splash of the pear poaching liquid in a saucepan until steaming. Add the cooked quinoa, oats, flaxseed, vanilla and a pinch of salt, and cook over a low heat for 5 mins, stirring until thick.
  • Step 4

    Spoon the porridge into bowls, top each with half a pear (or two halves), the pecans, remaining maple syrup and the seeds, if using. Pour a little more poaching liquid over the pears, if you like. Leftover porridge and pears (in their poaching liquid) will keep for 2-3 days in separate airtight containers in the fridge. Thoroughly reheat the porridge mixture, adding a dash of milk or some poaching liquid to loosen as needed.
