
Maple Cured Salmon with Pickled Red Onions

With the weather getting decidedly colder this quick and easy recipe will give you a nice sweet treat whilst also combing great fresh ingredients. Maple Syrup infused in to fresh salmon is just delightful.Time and servings

Ingredients
- 600 g of fresh salmon fillets
- 2 tsps of sea salt
- 4 tablespoons of st. lawrence gold maple sugar
- 1 tablespoons of smoked paprika
- 2 medium red onions
- 100 ml of red wine vinegar
Method
Step 1
Preheat the oven to 170C/150C fan/gas 3.Step 2
Lift the salmon and shake off all the excess curing mixture.Step 3
Place the cured salmon fillet onto a piece of baking parchment, then drizzle with the St. Lawrence Gold GoldenStep 4
Delicate Taste Maple Syrup.Step 5
Fold up into a parcel and transfer onto a baking tray.Step 6
Bake for 20-25 minutes or until fully cooked.Step 7
While the salmon is cooking, slice the red onions as thinly as possible and place in a container with a lid.Step 8
Pour the red wine vinegar over the onions and sprinkle with the remaining 1 tbsp sugar before closing the lid.Step 9
When the salmon is cooked, remove it from the oven and serve with the pickled red onions.
