
Marinated and Grilled Tamarind Salmon

Ingredients
- 1.5 tbsp of coriander seeds, for sauce
- 1.5 tbsp of chilli flakes, for sauce
- 90 g of tamarind paste, for sauce
- 90 g of dark muscovado sugar, for sauce
- 3 tbsp of fish sauce, for sauce
- 2 limes, juiced, for sauce
- 0.5 cucumber
- 4 spring onions
- 4 x 150g salmon fillets, skin on
- 2 red chillies
Method
Step 1
Set the grill on the highest heat.Step 2
Toast the coriander seeds in a frying pan until you hear them pop, then roughly grind witht he chilli flakes using a pestle and mortar.Step 3
Mix the dried spice with the rest of the sauce ingredients.Step 4
Place the salmon on a baking tray lined with oiled foil, skin side down, then brush the sauce over.Step 5
Grill it for 10 minutes and if it's flaky when you press lightly in the centre of the fillet, it's cooked through.Step 6
Serve with finely shredded cucumber, chillies and spring onion on the side.
